I just want to wish you

hope that you have time to draw close to family and friends and to reflect on
the rich meaning of this special time of year.
One of my favorite things
about July 4th is FOOD. I wanted to
share a favorite recipe with you. Put
this dish out on the picnic table and watch it disappear!

Mimi's Perfect Picnic
Potato Salad
-
6 medium potatoes, washed
and cut in half lengthwise

3 stalks green onion
-
2 large celery stalks,
chopped fine
-
¾ cup mayonnaise

4 eggs, boiled

Cajun Seasonings
- Salt and pepper to taste
Place potatoes in a large
pot with enough water to cover. Over
medium heat, boil until potatoes are tender and can be easily pierced with a
fork. Remove the potatoes and let
cool. Remove the skins of the
potatoes. Cut into small cubes and put
into mixing bowl. Chop eggs and add to
bowl. Add the celery, onions, Cajun
seasonings, salt and pepper and mix well.
Add the mayonnaise and mix again thoroughly. Cover salad and refrigerate for three to four
hours. Serve on a bed of lettuce. Serves six.
